Actually it has nothing to do with thermal expansion. The temperature of the water is nowhere near hot enough to cause significant expansion, and lets remember it will exapnd three dimensionally, which means it will go toward the glass as much as away.
The real reason is the breaking of the silica gel layer bonding the glass to the metal jar. Over time as you allow the glass to sit a silca rich region forms on the surface as a result of atmospheric and metallic chmical attack. This layer is more a gel than a solid but it will harden given time. When this happens you form a make-shift bond between the glass and metal lid. This acts to keep the lid closed and makes it very hard to open. Water can break this bond by disolving the silica gel layer. You can test this by using room temperature water rather than hot water. Even try cold water… it will still work!
